Paneed Chicken with Lemon Butter Sauce Recipe

On one of my visits to Destin, Florida I had the most lovely chicken dish with a lemon butter sauce. The restaurant has since closed. Still craving this yummy dish, I decided to try to concoct a version myself. I searched for a lemon butter sauce recipe. I came across one from Emeril Lagassee. You can’t go wrong with Emeril. BAM!

Don’t let the term paneed scare you. It is a Cajun cooking term meaning pan fried, usually with bread crumbs. I have adapted it to use only flour, because that’s the way mama made it growing up. I also like to pound my chicken breasts with a mallet to get them to a uniform thickness so that they cook evenly. If you don’t the thinner portions get tough in order to get the thickest part thoroughly cooked.

This has become one of my family’s favorite meals. I hope you will try it!

Paneed Chicken

Ingredients:
4-6 Boneless, Skinless Chicken Breasts
2 Cups Self-Rising Flour, Divided
1 Large Egg
1/2 Cup Water
1 tsp. Salt
1/2 tsp. Black Pepper
Vegetable Oil for frying

Directions:
Place one chicken breast on a plastic cutting board and cover with plastic wrap. Pound with a wooden mallet until 1/2 inch thick. Repeat with remaining chicken breasts. On a dinner plate, place 1 cup of flour. In a bowl, add egg and water and mix with a fork until combined. On another dinner plate add remaining 1 cup of flour, salt and pepper and mix until combined. Take 1 chicken breast, dredge in plain flour, dip in egg mixture coating thoroughly, and dredge in seasoned flour.

Heat oil to 350 degrees in a nonstick skillet. It should be deep enough to cover the chicken breasts completely when frying. Carefully add the coated chicken breasts and fry on one side until golden brown. Flip breasts over and fry second side until golden brown. Insert a meat thermometer and make sure the chicken is thoroughly cooked. It should read an internal temp of 165 degrees.

{TIP} If the outside is brown and the inside is not quite done, place in a 350 degree oven to finish them off.

Place Paneed Chicken Breast on a plate and top with Lemon Butter Sauce.

 

Lemon Butter Sauce

Ingredients:
1 cup dry white wine
3 lemons, peeled and quartered
2 tablespoons minced garlic
1 tablespoon minced shallots
1 teaspoon salt
3 turns freshly ground black pepper
1 dash Worcestershire sauce
1 dash hot pepper sauce
1/2 cup heavy cream
1/2 pound (2 sticks) unsalted butter, cut up, at room temperature
1 tablespoon finely chopped fresh parsley

Directions:
Heat a large nonreactive skillet over high heat. When the skillet is hot, add the wine, lemons, garlic, and shallots. Cook for 3 minutes, breaking up and mashing the lemons with a wire whisk. Stir in the salt, pepper, Worcestershire, and hot sauce and cook until the mixture is somewhat syrupy, for about 3 minutes. Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. When all of the butter has been added, remove from the heat, but continue whisking until all of the butter is incorporated into the sauce. Strain the sauce, pressing all of the liquid into a bowl. Stir in the parsley. Serve immediately, or keep warm for a few minutes until ready to use.

{TIP} You may have Lemon Butter Sauce left over. You can store it in the fridge for up to 5 days, or you can also freeze it. I recommend freezing it in ice cube trays so that you can pop out individual portions as needed. Just place them in a microwave safe bowl and heat until melted. This sauce is also great on grilled or fried fish.

How to Prepare for a TV Appearance Part 3 On the Show

In Part 3 of our 3 part series, ” How To Prepare For A TV Appearance”,
I will be sharing my experiences on a TV show for the first time.

A television appearance is much like your wedding day.
You plot, prep and plan. You study and do research.
You don’t know what to expect, but have given it your all to prepare.
Before you know it, all of the work comes to fruition.

Lights, Camera, Action!

Before you know it, it seems like a blur and is over.
You are not even sure what transpired clearly.
Thankfully, there is a video replay so you can catch up.

You finally relax now that it is finished.
And are tired. Really tired.
I did not sleep a wink the night before the show.
I knew I wouldn’t. I was too nervous. Too excited.
I practiced my questions and answers in my head.

Jennifer and I left Sunday morning to travel. She from Destin, Florida to Mobile, Alabama to meet me, and then on to Birmingham, Alabama. We wanted to arrive in plenty of time, for several reasons. We wanted to find the location of the studio in day light, so we would know how far away it was from the hotel. Also, GPS is amazing, but let’s face it, sometimes it is wrong. We did not want to arrive late and miss our segment. The studio wants you to arrive promptly at 8:30 the next day, or you do not go on. Plus we would have been frazzled had we gotten lost right before the show. We tried to make it in time to do a little Galleria shopping but God had other plans for our wallets. We were stuck in 3 traffic jams on the way up due to the Independence Day traffic heading home from the Gulf Coast beaches.

We had great conversation catching back up on the news from our busy day-to-day lives. We settled on a quick trip to Pottery Barn Kids and to browse Kate Spade at The Summit shopping center. Our real destination was the Cheesecake Factory. I knew it was one of Jennifer’s favorites. I found out there was one there, SCORE! It was really good. We share several appetizers and took home a big slice of Red Velvet Cheesecake for later.

We checked into our hotel and decided to rehearse our lines. Jennifer and I always get slap happy about 9:00 p.m. We giggle and get silly and think everything is funny. We have so much fun together! But this was time to be serious. For some reason we just could not look at each other and not laugh. So I recommended we pretend to be the newscasters by holding their pictures I had printed out over our faces. No eye contact – no giggling – for the most part.

We finally grew tired and went to bed. Nether of us could sleep, but we thought the other was asleep all night.

The alarm went off promptly at 5:30 a.m. We showered, primped and dressed. While doing so we had it on ABC 33/40 watching the Good Morning America Show. During the commercial break we were delighted to see that Talk of Alabama chose to announce the upcoming show by mentioning us and showing our photos on the promo. That was amazing!

Remember last weeks post – mistakes. Well, I wasn’t as off base as I had thought. I ended up wearing the dress I bought for the show. Once I found the Sassy Jones Boutique “McKenzie” necklace everything came together. It had the cobalt blue from my dress, the hot pink from my Lilly Pulitzer Kat Kitten Heel shoes and a pop of turquoise. That gave me the perfect excuse to carry my Kate Spade Holly Street Ashton Giverny Blue bag. I felt confident and as ready as I would ever be.

What I Wore on TV

We proceeded to travel to the ABC studio. We arrived almost 40 minutes early. Not wanting to be the first ones to arrive. we waited nervously in the car not knowing what to do with ourselves. We both love the TV show “The Office. Dwight Schrute is one of my favorite characters. He has this ritual before a big sales meeting of playing air guitar to Motley Crue’s “Kickstart My Heart. So I surprised Jennifer by playing it on my I-Phone. We laughed and the nervousness seemed to fade. We listened to a few more songs until a decent time to go in.

We arrived at the studio door, and the receptionist buzzed us in. We met the show coordinator Dan and he told us we would be on about 9:15. He told us to make ourselves at home in the lobby. It was a bustling day for guests. Several people were sitting nervously around in the lobby. There was an all star youth baseball team. We were in the same room with baseball great Willie Mays and did not even realize it until we watched the replay later.

We watched Good Morning America on the monitors until the show started. I was thrilled to be chosen as the lead story. They showed our product photos and chatted about some of the celebrities that were being shown. I snapped a few photos of the monitor.

That’s when butterflies started in. I had a fight or flight reaction. And I had considered flight for a second. I gave myself a mental pep talk. “Okay, you know this stuff. You live and breathe it daily. All you are doing is having a conversation with another person. You got this.”

Dan came up at about 9:10 and said it was time. We followed him through a hallway to a small room that contained a couch, a cooking area and the place we were to stand with the table. The intern hooked up the microphone and we had a sound check. During the commercial we chatted with Ebony and Sheri. They are both so gorgeous and sweet in person! We chatted about our shoes and a little about the shop. This helped put us at ease. Then it was time.

Sheri Falk introduced us. I had prayed that I would not say” uh”, “and” or “uhm” too much. I looked at her face while chatting never looking at the camera and had a very pleasant conversation. The words came pretty easily and I was pleasantly surprised. They showed photos and scrolled on screen through our shop.  I even glanced at the camera for a second and did not freeze. Before I knew it, we were finished. When we were leaving, Dan told us we did a great job. He invited us to get in touch with the producer if we would like to come back in the future. Once out of sight, Jennifer and I left the studio and high-fived each other.

After contemplating and talking with Jennifer, we both felt like it went by so fast. You plan and plan and it is over before you know it. If it were not for the video I would not really even know what happened.

I really am glad we conquered our fears and did this.
I would love to do it again.
As a matter of fact, I have 2 more dresses I need to wear…

How To Prepare For A TV Appearance Part 2 Prep Mistakes I Made

I admit, I made some mistakes.

Remember my sheer excitement last week over the invitation to appear on TV?
Well even a planner and preparer such as myself can get a little over zealous.

I bought 3 dresses. Well, that may be a little overkill. At least I will wear them to work, church and other places, so it is okay. What I did do AFTER I went shopping was to start watching the show daily. And second-guess my decisions. I suppose that is a normal thing to do on such an exciting occasion as your first time on TV. I see people breaking the rules on there daily – and they seem to work out just fine. I see ladies wearing statement necklaces daily. Thank GOD! Those are a staple in my wardrobe and I may feel a little less spunky without mine. I saw a lady wear a white suit – we are talking head-to-toe white. And she was beautiful on camera. Although I won’t wear white – I feel like I need a little “color”. I have seen patterns and prints, all working beautifully. So you may see me in one of those lovely new dresses or you may see me in my favorite Old Navy Eyelet dress right out of my closet. I have 3 outfit options in mind. I will take them all and see what feels right the day of the appearance.

You know it’s a woman’s prerogative to change her mind….

About the makeup. I bought a bunch of makeup. On 2 different visits to Ulta. On the second, I went back to replenish my daily staples. Yes I want to look great on camera. But what I have been doing works for me. I added a couple of new products, but overall, I will keep with my routine. Remember the false lash mascara. Hated it. I guess I don’t need length but volume. So I went right back to my true mascara love, Loreal Paris Voluminous. I have light colored eyes an feel that they get lost without the right mascara. And my eyes water daily. So I got the waterproof version. Tried a bronzer. Not really that impressed. I think I will self-tan before I leave home to travel to Birmingham.

I jumped on the advice bandwagon a little too soon.
The lessons I pass onto you if you are ever in a similar situation:
Stick with what works for you.
Try new things before the day of your appearance just in case they don’t work so well.
Relax and be yourself. You are chosen for a reason.

{How To} Prepare for a TV Appearance – Part 1 – Before The Show

I have accepted the invitation, booked the hotel, planned the road trip with my bestie.

NOW WHAT?

I am a plotter and a planner and a researcher at heart.
A little bit of an introvert….

Can you identify?

I googled “What to wear on tv”

I got all kinds of lovely advice:
Don’t wear black, white or red.
Don’t wear statement necklaces.
Don’t wear dangly earrings.
Don’t wear pattens.
Don’t look at the camera unless told to do so.
Speak louder and with more energy but don’t yell.
Wear makeup.
Use powder to eliminate shine.

My favorite:
When you are on TV, you are not giving a public speech. You are having an engaging
conversation with one or two people.  Don’t think about the audience; instead focus on the one person you are talking to at that moment. Since you talk to one person at a time all day long anyway, there is no reason to be nervous.

I learned alot and felt more confident…

Now I need a trip to the makeup mecca – ULTA.
I could spend hours and hours in that store.
Headed to Ulta with new tips in hand, I purchased several products.
False lashes and I are not friends. I wanted to purchase a mascara that mimics the look.
False Lash Mascara – check.
Non-Shiny Bronzer – check.
Perfect nail and toenail polish – check.
I was feeling confident.

We became business owners quite by accident…

We recently did a little Q&A with The UPS Store  for small business week May 5-9, 2014. I thought I would share some of the questions and answers with you so that you could learn a little more in-depth about us and our story.

Why did you start your own business?

We became business owners quite by accident. My best friend, Jennifer Lee, and I were planning her daughter’s first birthday party. We purchased a tutu at a local shop, but it was not exactly the perfect one. We decided to do a little research and try our hand at making them ourselves. Once I made the first one, I was hooked! I quickly realized that it ignited a passion inside me. It was so much fun and a great outlet for my creativity. We decided to try our hand at a local flea market to see if anyone would be interested in them. The response was overwhelming! Everyone that walked by the booth, even if they did not purchase a tutu, remarked at how cute they were. Quickly, we knew we were onto something and realized that the flea market was not the perfect place to sell them. We tried our hand at starting our own website. It was very difficult to get the word out about the website and grow traffic without a large marketing budget to get started.

I was reading Martha Stewart Living and came across an article about Etsy. I decided to check it out. I opened our shop in 2010. Atutudes was born! The rest, as they say, is history. Etsy made it much easier to grow our business due to its built-in base of handmade fans and shoppers. It is the #1 retail site for handmade goods with literally millions of potential customers.

 

What obstacles did you encounter when deciding to start your business?

It was tough finding tulle that would be safe for children. We really took the time to ensure that our products were safe. We had tulle samples safety tested until we found the right brand. Our tulle is lead-free, flame-retardant and made in the USA.

 

What ultimately inspired you to take the leap of faith and start your business? We were really weary from making the tutus, storing them at our homes, taking them to the flea market early on Saturday to set up, finding we sold out of the size a customer was looking for before the day was over, packing everything up on Saturday night to take home, and doing it all over again on Sunday. I knew there had to be a better way! Etsy has been such a blessing to us. We are able to get paid for the item, order the supplies, make and ship it. There is no need to keep each size of each item we offer in stock.

 

What support was most critical to that decision to start your business? Did you seek the help of mentors? What support has been most critical to your success?

Our husbands and family are our biggest cheerleaders. They are always there to listen, help and encourage. I am also blessed at the enormous online community of business owners that are always willing to help me figure out a solution to a problem or bounce an idea around with. I have made many amazing friends through networking.

 

If you didn’t own your business today, would you start it all over again?

Absolutely! And much sooner. It has been an amazing journey and I am grateful for the way it blesses my life daily.

What is your favorite part of owning your business today?

We have been able to do some pretty amazing things with Atutudes. One of the best ways we increased our audience was by participating with The Artisan Group to have our products featured at the GBK Luxury Celebrity Gift Lounges honoring the nominees and presenters of Oscars, Emmys, and Golden Globes. Our participation proved to be very effective in generating a buzz for our business. Through The Artisan Group, we also got our tutus into the hands of such A-list celebrities as Beyonce, Jessica Alba, and Jessica Simpson, just to name a few.

In 2013 we were chosen to create a custom mermaid themed tutu for the original Bachelorette, Trista Sutter, for her daughter Blakesley’s birthday celebration. I have followed Trista and Ryan’s love story from their first date on the Bachelorette. We worked closely with Natalie Klein of Hollywood Hot Moms to create the perfect outfit for Blakesley’s special day. Natalie and Trista were kind enough to let is use the photos from the party in our Etsy shop. The best day was the day my OK Magazine arrive in the mail with a photo of Trista hugging Blakesley who was wearing an outfit I created. I was beyond thrilled!

This past year we were also selected by Miss Iowa USA, Nicole Kelly, to create a custom accessory for her appearance in the Miss America Pageant’s Annual Show Us Your Shoes Parade. I was thrilled to collaborate with Miss Iowa to create something special for her big day. She is one of the most inspiring ladies I have ever had the opportunity to collaborate with. Iowa’s official state flower is the wild rose. She asked me to create a hot pink rosette necklace/headband and pin to coordinate with her gorgeous outfit. I was over the moon to see her on television. She was kind enough to be thank us on her Facebook fan page along with allowing us to use a photo in our shop! Her photo in our creation also appears on the Miss America Website and Facebook page.

Each time such amazing opportunities present themselves I just look back and can’t believe that a small-town Alabama girl could do such unbelievable things. Someone pinch me!

 

What has been the greatest benefit to you starting your company?

In March 2013 I lost my full-time job of 17 years at a local print shop. If it were not for my Etsy shop, I could not have paid my bills. I was able to support our family and not have to draw unemployment. I recently started another “day” job in November of 2013. I love my new job and am so happy there. Both jobs are a blessing in my life. I get to work with wonderful, supportive people every day. The peace of mind knowing that I always have the freedom of a backup plan is invaluable.

 

What is the most difficult part of owning your business today?

Knowing when to take a break. I am so passionate about it. I am constantly on social media or returning emails into the wee hours of the night. I absolutely love learning new things and connecting with people. I am getting better at allowing myself down-time.

 

Would you ever consider mentoring someone else interested in starting their own business?

Absolutely! I love to help others with the knowledge I have gained through the years. I am a member of a couple of small business groups and help anytime I can. I think it is especially important for women to be supportive of one another. We are the only ones who can truly understand the challenges women face in such a fast-paced society.

 

What’s the one piece of advice you’d give to someone considering starting their own small business?

Don’t be afraid! Just go for it. I was personally terrified of taxes. Look for mentors to help you through the things you don’t know. Build a team of supportive friends and fellow business people. Community is key to making it. Be original. Be social. Be supportive of others’ dreams. Make new friends. Let your light shine! Only you can share your unique and exquisite gift with this world. Be YOU-tiful!

 

So what’s next for you and your business?

We are always looking for new and exciting opportunities. We are submitting one of our items for consideration to The Bachelorette television show on ABC. I also will have one of my recipes published in a cookbook releasing this Spring called The Sisterhood of The Traveling Apron. It is written by a good friend of mine, Aimee Broussard, of Aimee Broussard & Co., who I met and bonded with through social media. I am honored to be chosen to be included and considered her friend because I think she’s pretty awesome herself!

{How To} Tell If Your Tutu Is Safe

I thought that it was important to share a little knowledge on how to tell if your tutu is well made and if it is safe for your child. Before Jennifer and I ever sold our first tutu, we spent several months searching for tulle that is safe, lead free and flame retardant. We wanted to ensure that our products would not harm your children. We had some tulle tested by a laboratory that we bought from a very popular craft store. It came back as unsafe for children’s products. I had already made several tutus to prepare for our first trip to the flea market. I immediately destroyed all of them and started from scratch. Here is how you can ensure that you have a well-made, safe product:

1. All of the tulle we buy is made in America. It does cost more, but it is worth it. So please don’t buy the cheapest thing that you see. Our tulle is lead-free and flame-retardant. We feel this is very important. We do not want your little ones wearing a tutu for their birthday party or wedding where we know there will be candles. I am saddened to see many, many tutus for sale that are not well-made, charging cheaper prices, and made of tulle that I know is not certified safe for your child. I can usually tell by the colors and styles. If it has a pattern or is glitter tulle it is likely not safe. The safe tulle should be treated with glitter AFTER it is made. Be sure to converse with the seller you are buying from to ensure that the are using lead-free and flame-retardant tulle. If not, DON’T BUY IT!

2. Look closely at the knots and the hemline. If the lines of the tutu or tutu dress is lumpy, bumpy, sloppy, uneven, spread apart, you an see the elastic from the outside, or loose looking DON’T BUY IT. Zoom in on those photos to see. If it is loose, your child can get their little fingers in their and untie it. Also, I often see sellers touting their tutus as better because they are sewn. Sewn does not make it better. If the craftsman is skilled and experienced, it will be well made and last long whether it is sewn or not. I have many customers who tell me they are still wearing their tutus over a year later and have even passed them down to other little ones who are still wearing them.

3. And sometimes the photos being used are not even their own work. Do your research. If a shop has many, many different mannequins, models and their photos do not look cohesive, most likely they have stolen other shop’s photos and are not their own. You will order something lovely that is pictured and end up witha shabby looking product that does not look anything like the photo. Please do not support shops that also post photos and say, “We didn’t make this it is just to show you what we can do.” You have no idea what the finished product will look like. DON’T BUY IT!
